Miso Soup

Nothing beats a warm bowl of miso soup on an overcast day. This recipe is super quick and easy!

Ingredients

4 cups dashi stock

2 heaping tbs of white miso paste

½ package of soft tofu, cubed

2-3 green onions, sliced thinly, green part only

Seaweed, cut into thin and short strips, optional


Instructions

  1. In a large pot over high heat, bring the 4 cups of water to a boil. Lower the heat to medium-high and add in your dashi stock powder, and stir until dissolved. Then add in the soft tofu, and cook for 3-5 minutes.

  2. Transfer about ½ cup of stock to a measuring cup and stir in your miso paste until fully dissolved. Wait until the tofu is cooked, then lower the heat to low and strain the miso mixture back into the stock.

  3. Add in the green onion, seaweed, and stir. Serve while hot. Enjoy!
