Hot & Sour Glass Noodle Soup

If you’ve ever been to Dough Zone and enjoy their hot and sour noodles, this recipe is for you. Their description of this dish is a “tangy hot and sour broth ladled over sweet potato starch noodles and topped off with peanuts and cilantro”.

Ingredients
6 tbs roasted peanuts
8-9 oz dried sweet potato noodles
5 cups low sodium chicken or vegetable
2 slices of ginger, minced
4 cloves of garlic, minced
2 tsp toasted sesame seeds
2 tsp Sichuan chili flakes or red pepper flakes
6 tbs vegetable oil
4 tbs Chinese black vinegar
4 tbs light soy sauce
1 tsp dark soy sauce
1 tsp sugar
1 tsp Sichuan peppercorn powder
½ tsp white pepper
1 tsp sesame oil
2 tbs chili oil
Scallions, thinly sliced, to taste
Cilantro, picked or chopped, to taste
Instructions
Bring a pot of water to a boil, and cook the noodles according to the package instructions. Drain and rinse in cold water. Set aside for the bowl assembly.
In another pot, heat your stock over medium heat.
In a large bowl, add your ginger, garlic, sesame seeds and pepper flakes. Heat 3 tablespoons of any neutral oil until it starts to smoke lightly. Pour this mixture slowly over the ingredients in the bowl so that they’ll combine into this delicious base sauce. Make sure to stir.
In that same bowl, add in your soy sauces, vinegar, sugar and sichuan peppercorn powder, sesame oil, white pepper and chili oil.
Add in your hot stock, 1 cup at a time, into the sauce bowl and mix well. Taste test the broth with each cup of stock that you add. If the flavor is too strong, continue to add another cup of the broth. If you add in all the cups and it becomes too tame in flavor, add another round of your black vinegar, light soy, dark soy, and sugar until you are satisfied.
In your serving bowls, add in your noodles, scallions, cilantro and soybeans/peanuts and top off with the soup until your bowl is ¾ full and enjoy!
Note: I used all of the broth and the overall flavor was too tame, so I had to add more of the sauce mixture. I would suggest incrementally adding the stock into the sauce mixture to achieve your ideal balance of hot and sour flavor.
Note2: If your party is extra hungry, it never hurts to make more noodles since the full package might only be 1-2 oz more than what’s asked of in the recipe.
