Crispy Leftover Rice

Got leftover takeout rice? Heat it up into a nice and crispy layer, and top off with yummy mushrooms.

Ingredients
8-10 large shiitake mushrooms, sliced
1 tbs soy sauce
½ tbs sugar
1 tsp black pepper
1 tbs oil
1 cup leftover white rice
1 ½ tsp garlic salt
1 tbs light soy sauce
1 tsp dark soy sauce
1 tsp white pepper
2 tbs oil
Instructions
Rinse, and remove the stems of the mushrooms.
In a large nonstick pan, heat to medium high. Add in the oil and the mushrooms, and let the mushrooms cook for a few minutes.
In a small bowl add in the soy sauces, sugar, and black pepper. Stir until well mixed, and then add into the pan. Cook for another few minutes or until the mushrooms absorb the sauce.
In the same pan, wipe off any excess sauce, and add in some more oil. Then add in the leftover cooked rice and season with garlic salt, white pepper, and soy sauces. Toss until the rice is evenly coated, and smooth it down with a spatula and let cook for another 10 minutes, or until the rice has a crispy bottom.
Carefully transfer the crispy rice to a large round plate by sliding it over or in large sections if that’s too hard. Top off with the mushrooms and add fresh scallions. Enjoy!
