Zucchini Fritters

Serves: 2-3

Prep Time: 25 min

Cook Time: ~15 min


These vegetarian zucchini fritters are quick, crispy, fresh and best served with tzatziki sauce.

Ingredients

⅔ cup flour

2 large zucchini (~4 cups), shredded

2 eggs, lightly beaten

⅓ cup green onions, finely sliced

Canola oil


Tzatziki Sauce

1 cup plain or greek yogurt

1/4 cup cucumber, finely diced

2 tsp fresh dill, chopped

1 tsp lemon juice

Salt & pepper, to taste


Instructions

  1. Shred the zucchini using a cheese grater. Let it sit in a strainer and sprinkle with salt, allowing it to release its liquids. Let it sit for about 10 min.

  2. Squeeze out all the liquid that you can and transfer to a large mixing bowl.

  3. Add in the flour, eggs, scallions, salt and pepper. Stir well.

  4. Line a plate or baking sheet with paper towels.

  5. Add oil to a large saute pan and set over medium heat.

  6. Once the oil is hot, you can add in the fritter mixture. You can also make them as big or little as you want. Just want sure that it isn't too thick so that you can a crispier finish. Make sure you give them some space in between each one or they'll start to fuse together. Cook each side until golden brown and transfer to your lined plate. Sprinkle with salt.

  7. Serve with tzatziki sauce if you like, and garnish with green onions. Enjoy!
