Vietnamese-Inspired Rice Crisps

Quick and easy is the name of the game. Enjoy these snacks with a sprinkle of hot sauce and any garnishes you prefer.

Ingredients

3 (8-inch) round rice paper wrappers

Vegetable oil for frying

Crushed peanuts, optional

Chili crisp, optional

Green onions, optional


Instructions

  1. Using scissors, cut each rice paper (or stacked together) in half, and then in half again.

  2. Heat a skillet with 1-2 inches of oil over moderate heat.

  3. When the oil is hot enough, add in the rice paper pieces and watch them grow in size and curl upwards. Fry until crisp, remove from the oil and let it rest on paper towels.

  4. Once cooled down, garnish with extra peanuts, chili crisp and green onions. Enjoy!
