Vegetarian Lasagna

Crispy on the edge, soft and hot in the middle. The combination of cheese, spinach and marinara sauce is to die for. So good, it tastes better without meat. Who doesn't love lasagne? The secret of this recipe lies in the Monte Benne brand marinara sauce.


Ingredients

5 tbs olive oil

1 ½ medium onions, chopped

2 large carrots, chopped

3 cloves of garlic, chopped

1 ½ jars of Monte Benne marinara sauce

1 package of lasagne

2 eggs

32 oz ricotta cheese

1 package of frozen chopped spinach

1 ½ cup grated parmesan, plus more (to preference)

1 ½ cup mozzarella, plus more (to preference)

Salt & pepper, to taste

Parsley, for garnish (optional)


Instructions

  1. In a large pot (4-6 quart), caramelize the onions over medium high heat. Add a generous pinch of salt, which will help aid the cooking of the onions. Then add in the carrots. After about 5-7 minutes, add in the garlic. Once the garlic starts to brown, add in the tomato sauce. Let cook for 30 min. Taste for salt, and add in pepper.

  2. Meanwhile, combine the ricotta cheese and the eggs, and the frozen spinach in a large bowl and mix until fully incorporated.

  3. Cook the lasagne pasta according to the package, but to al dente because it will cook longer in the oven.

  4. Preheat the oven to 375.

  5. Start to assemble your lasagna, start with sauce, then noodle, then ricotta, then sauce, then cheese, then noodle, and keep repeating (sauce, cheese, noodle) until you have your four layers, ending with cheese. For the top layer, I like to add extra cheese, but that is optional.

  6. Bake for 45 min. Remove from the oven, garnish with more cheese, and parsley. Let it rest for ~12 min.
