Tomato & Egg Stir-Fry

This vegetarian Chinese classic is quick, easy, cheap and delicious.

Ingredients

2 medium tomatoes

2 eggs

Pinch of salt

Pinch of white pepper

¼ tsp of sesame oil

½ tsp shaoxing wine

1 tsp of sugar

Green onions, thinly sliced

~1 tbs canola oil

Water, as needed


Instructions

  1. Cut tomatoes into small wedges.

  2. Chop the green onions.

  3. Mix eggs into a medium bowl and add in salt, white pepper, sesame oil, and cooking wine. Beat eggs and set aside.

  4. Heat a medium pan over medium heat, and add in the oil. Throw in the eggs, lightly scramble and place on a plate for later use.

  5. Add in some more oil, and turn to medium-high heat. Add in the tomatoes and scallion. Toss in sugar, salt, and a splash of water for a thicker sauce. Add in the cooked eggs. You can add as much water as you need. The mixture should be a little wet, but not a sauce, and not fully dry. Cook for 1-2 minutes.

  6. Mix well, and remove from heat once the tomatoes have softened.

  7. Serve while hot and with rice! Enjoy!
