Tomato Egg Drop Soup

This delicious Chinese soup is super easy to make, takes under 15 minutes and is a great combination of flavors.

1-2 tbsp oil
½ clove of garlic, minced
2 tomatoes, diced
4 cups chicken stock (1 box)
½ cup of green onions, thinly sliced
2 tbs soy sauce
2 eggs, beaten
Cornstarch slurry
White pepper to taste
Salt to taste
Instructions
Add oil into a medium pot over medium-high heat. Throw in the tomatoes, season them with salt, and let it cook down for a couple minutes.
Add in the garlic, half of your green onions and your chicken stock.
Once the broth starts to simmer, toss in your cornstarch slurry and let it thicken.
Make a tornado/vortex by stirring with the spoon, add in the eggs into the middle and watch them transform into a fine lace.
Cook for an additional minute. Taste for seasoning, garnish with more green onions and enjoy!
