Thai Beef Salad

Elevate your salad with a simple, zingy and fresh dressing with grilled steak.

Ingredients

Dressing

2 tsp sugar

2 tbs fish sauce

3 tbs lime juice

1 tbs oil

1 tbs cilantro stems, finely chopped

3 garlic cloves

1 Thai chilli, very finely sliced


Salad

2 cups mixed lettuce leaves

¼ cup cherry tomatoes, halved

½ cucumber, cut into small pieces

¼ red onion, finely sliced

¼ cup mint leaves, lightly packed


Beef

8 oz top sirloin

½ tbs oil

Salt & pepper, to garnish


Instructions

  1. In a mortar and pestle throw in chili, garlic, stems and grind ‘til it forms a paste.

  2. In a smaller bowl, mix the rest of the dressing ingredients with the paste. Adjust all items to taste.

  3. Turn on your grill and set to 450.

  4. Season your sirloin with salt, pepper and oil on both sides and cook to your preferred done-ness (medium rare is recommended). Remove from the grill and place on a resting place for 10 min.

  5. In a large bowl, add salad ingredients, dress and taste as needed. Thinly slice the beef and drizzle with a little of the dressing. Add the meat on top of the salad and dress some more. Garnish with extra cilantro and mint.

  6. Serve and enjoy!
