Spring Picnic Essentials: Grilled Nectarines with Greek Yogurt & Granola

A super quick & fresh dessert that is sure to be a smash at your next socially distant hangout. This treat relies on the great char from the grill, paired with a fresh cream mixture!
Ingredients:
1 cup Greek yogurt
1 cup heavy cream
4 tablespoons honey
½ tablespoon vanilla extract
½ teaspoon salt
3 whole nectarines (sub peaches, plum, etc..)
Optional topping: granola, toasted nuts, chocolate
Directions:
Preheat the grill on high for 15 minutes prior to grilling fruit. Slice the nectarine in half, taking the pit out. Place the cut side down on the preheated grill and grill for ~ 5 minutes or until nectarine is slightly soft and golden brown char marks. Flip and repeat on the other side.
In a stand mixer, whip the heavy cream on high until the cream has become light and fluffy. Add the vanilla, honey, and salt to the cream mixture, whip together. Slowly add in the yogurt to the cream mixture. Set aside for assembly.
To assemble, place the grilled nectarine on a plate and place large dollops of the yogurt cream mixture on top. Sprinkle granola, chopped nuts and/or chocolate on top for added texture and flavor.
