Spicy Summer Pasta Salad

This summer pasta salad is quick, fresh, fun and a little bit spicy.

Ingredients
2 ½ cups macaroni
2-3 corn on the cob, kernels cut
2 tbs of garlic powder
2 tbs of tajin
½ cup cotija cheese
½ cup red onion, diced
1 jalapeno, chopped
½ cup cilantro, chopped
2 garlic cloves, minced
¼ tsp cayenne
Salt & pepper, to taste
Dressing
1 cup mayo
½ cup plain greek yogurt
¼ cup lime juice
2 tsp lime zest
Salt & pepper, to taste
Instructions
In a large pot of salted boiling water, cook the pasta according to the package. Drain and rinse with cold water. Set aside for later.
Combine all salad ingredients into a large mixing bowl and in another small bowl, make the dressing. Slowly add in dressing, because you may have extra.
Keep the salad in the fridge until you’re ready to serve. Take it out 20 minutes before serving, and enjoy!
