Spiced Ginger Molasses Sugar Cookies

Thick and spiced ginger molasses sugar cookies are a treat! Easy to make, and quick to best, these goodies are best served with vanilla ice cream on the side.

Ingredients
2 ¾ cup all-purpose flour
1 ½ tsp ginger, ground
1 tsp cinnamon, ground
¼ tsp nutmeg, ground
⅛ tsp cloves, ground
¾ tsp baking soda
¼ tsp salt
¾ cup butter, unsalted and warmed up to room temperature
1 cup brown sugar, packed
1 large egg
2 tsp vanilla extract
⅓ cup molasses
⅓ cup sugar, granulated
Instructions
In a medium bowl, whisk the flour, spices, baking soda and salt together.
In a standing mixer on low-medium speed, beat the butter and brown sugar until it is fluffy. Add in the egg, vanilla and molasses.
Add in the flour mixture a little at a time so as to not overload the bowl. Cover and place in the fridge for 30 min.
Preheat the oven to 350 degrees.
Meanwhile, line your baking sheets with parchment paper.
Pour the granulated sugar into a deep bowl, form the dough into small-ish balls and roll in the sugar until completely covered. Smash the balls down lightly until a thick circle is formed.
Place dough 2-inches apart on the sheets and bake in the middle rack for about 10 minutes or so. Test with a toothpick and if it comes out clean, it is good to go.
Note: When you bake the dough as is, they never fully deflate into a cookie shape and mostly maintain their ball form. Because of this, I smashed the cookies lightly so that they keep their cookie shape, but interestingly they didn’t form cracks on the surface.
