Soy & Honey Glazed Potatoes

This vegetarian potato dish is super easy, and low fuss. The combination of the honey and soy sauce brings together a flavor packed bite that you can’t miss.

Ingredients
2 - 2 ½ cups potatoes, broken into bite sized pieces
6 cloves of garlic, minced
1 cup water
5 tbs of light soy sauce
3 tbs of unflavored honey
Instructions
In a 2 cup liquid measuring cup, add in 1 cup water, 5 tbs soy, 3 tbs honey, and mix until fully dissolved.
Cut and/or break your potatoes (any kind if fine, I used 3 types skin on) into bite sized pieces. I’ve been told that breaking your potatoes (start a cut, and then use your hands or carefully use your blade to break the potato) releases the starch inside which acts as a natural thickener.
In a large and shallow pan, add 2 tbs of oil on medium high heat. Add in the potatoes and cook for 5-7 minutes. Or until potatoes are golden brown. Make sure you are stirring frequently or it’ll start to stick on the bottom.
Add in the sauce, and the minced garlic.
Cook for another 8-12 minutes, or until the potatoes are cooked and the liquid has condensed down into a thick sauce. To tell if a potato is cook, stick a fork into a piece and if it goes in easily and breaks apart, then it is ready. You will see potatoes change from a bright yellowish color with a hard physical texture to soft to touch and more of a less prominent beige/brown color.
Plate and garnish with fresh green onions, and sesame seeds. Enjoy!
