Serves: 4-6

Prep time: 10 minutes

Cook time: 20 minutes

A twist on the classic pancake! The sourdough starter gives these pancakes a mildly sour flavor and a light, fluffy texture. Top with fresh berries and maple syrup to add sweetness.

Ingredients

2 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

2 tablespoons granulated sugar

1 teaspoon salt

1 cup sourdough starter

1 ½ cups milk (can sub plant-based milk)

1 large egg beaten

2 tablespoons vegetable oil

Directions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.

  2. Next, add in the sourdough starter, milk, egg, and oil. Miw well until just combined.

  3. Heat a griddle pan or cast iron skillet over medium heat. Coat pan with butter.

  4. Pour ¼ cup of pancake batter into the preheated pan. Cook until the pancake starts to bubble on top, then flip the pancake. Cook for an additional 1-2 minutes or until the pancake is golden brown.

  5. Serve warm with butter, syrup, yogurt and berries.
