A twist on the classic pancake! The sourdough starter gives these pancakes a mildly sour flavor and a light, fluffy texture. Top with fresh berries and maple syrup to add sweetness.

Ingredients
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons granulated sugar
1 teaspoon salt
1 cup sourdough starter
1 ½ cups milk (can sub plant-based milk)
1 large egg beaten
2 tablespoons vegetable oil
Directions
In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
Next, add in the sourdough starter, milk, egg, and oil. Miw well until just combined.
Heat a griddle pan or cast iron skillet over medium heat. Coat pan with butter.
Pour ¼ cup of pancake batter into the preheated pan. Cook until the pancake starts to bubble on top, then flip the pancake. Cook for an additional 1-2 minutes or until the pancake is golden brown.
Serve warm with butter, syrup, yogurt and berries.
