Silken Tofu with Black Bean Sauce

Another silken tofu recipe but with a salty and savory black bean sauce to go with it!

Ingredients

1 lb silken or soft tofu

4-7 small dried shiitake mushrooms, soaked overnight and diced


Black Bean Sauce

4 tbs neutral oil

1 bunch green onions, chopped

4-6 large cloves of garlic, minced

2 tbs Lee Kum Kee chili black bean sauce

2 tbs sugar

1 tbs soy sauce

1-2 tbs rice vinegar

2 tbs dark mushroom soy sauce, optional

1 cup mushroom water (or regular)


For Garnish

Green onions, thinly sliced


Instructions

  1. Soak the shiitake mushrooms overnight, or until rehydrated.

  2. Carefully remove the silken tofu from the packaging and drain any excess water.

  3. Let the tofu rest while you complete further prep.

  4. In a medium saucepan over medium heat, add in the oil. Once the oil is hot, add in most of the green onions (save some for garnish), minced garlic and saute until aromatic. Then toss in your diced mushrooms and saute for another minute or two.

  5. Add in the black bean sauce, sugar, soy sauce, vinegar, dark mushroom soy sauce, mushroom water (or regular water). Stir well and occasionally as it cooks.

  6. In a small bowl, make a cornstarch slurry, add into the sauce and taste the sauce for seasoning. Adjust if needed, cook for 1-2 minutes and turn off the heat.

  7. Prepare a steamer and steam the tofu for 8-10 minutes.

  8. Once done, carefully drain any excess water from the tofu using heat protection.

  9. Pour the sauce over the silken tofu and top with the green onions. Serve with a bowl of steamed rice, enjoy!
