Scallion Oil Noodles

This is my favorite quick & easy noodle recipe for when I have a very busy week at work.

Ingredients
~9 tbs vegetable oil
1 bunch scallion, roughly chopped (save 1-2 stalks for garnish if you don’t have extra)
1 tbs oyster sauce
1 tsp soy sauce
1 serving fresh noodles (~8 oz)
Instructions
Heat up a skillet over medium to medium-high heat and add in oil to fill the bottom of the pan and then some. When the oil is hot, add in the scallion bits and stir continuously until they lose their color, crisp up and appear burned. Pour into a bowl and let cool.
In a medium pot, heat up some pasta water. Cook your noodles according to their packaging or to your preference. Drain the noodles and transfer into your serving bowl.
Add a generous drizzle of scallion oil (store the rest for later usage), oyster sauce and soy sauce onto the noodles.
Garnish with a fried egg, and green onions, or whatever else you prefer.
