Sautéed Chinese Green Beans

Restaurant green beans have a great texture, and char to them. This is due to the high heat of the wok and open flame style of cooking. There are two main styles of Chinese green beans that most people may be familiar with, Szechuan style spicy garlic-y, or just plain garlic-y. This recipe is much more simple than you would think! Meat is optional.



Ingredients

1 lb of green beans, clipped on both ends

2 shallots, sliced

7 medium cloves of garlic, chopped

1-2 slices of ginger, skin on or off (to your preference)

½ red chili pepper, sliced

Ground pork, optional


2 tbs soy sauce

1 tbs sesame oil

1 tbs oyster sauce

¾ tbs chili flakes


Instruction

  1. In a large pan, over medium/high heat, add 1-2 tbs of oil, and sauté the green beans until they start to blister, and wrinkle. Make sure you are using a pan that can be on high heat, as a conventional stove won’t be hot enough as a wok with gas flames. Set aside when you’ve gotten the consistency you’d like. It can help to add in 1 tbs of water to get the pan to create steam. If you think they need more time and are tired of stirring them in a pan, you can throw them into the microwave for 1-2 min.

  2. In the same pan, add another 1-2 tbs of oil, and throw in the shallots and garlic. Once it starts to brown, add the green beans back in, the sauce ingredients, and the slices of ginger. Cook for about 5 min, or more to get more of a caramelization, and flavor packed bite.

  3. Remove from the stove, and serve hot and with other sides, or rice. Enjoy!
