Salt & Pepper Shrimp

Serves: 1-2

Total Time: 30 mins


A Chinese take out classic known for it's crispy & seasoned goodness. This easy recipe can be finished in 30 minutes.

Ingredients

½ lb of shrimp, shells on, deveined

1 ½ tbs freshly ground black pepper

¾ tbs coarse salt

½ cup cornstarch

~¼ cup oil for shallow frying

3 large cloves garlic, finely chopped

1 jalapeno, finely chopped (seeds removed, optional)


Instructions

  1. Rinse the shrimp and then pat dry them with a paper towel. Toss them in the cornstarch, making sure it’s covered entirely for a crisper finish.

  2. Add oil into a cast iron, or small saucepan over medium-high heat. Add the shrimp in, 2 at a time, and cook on each side for 30 seconds. Set aside on a paper towel and sprinkle the salt and pepper mixture on both sides. Repeat until all shrimp are cooked and seasoned.

  3. In the same pan, add another tbs of oil, and throw in the garlic, stirring constantly, and cook until golden brown. Set aside on a paper towel.

  4. Throw in the chopped jalapeno pepper into the pan, and cook for 1 min. Turn off the heat and throw the garlic and shrimp back in to mix well.

  5. Top it off with a sprinkle more of the salt and pepper mixture, serve, and enjoy!
