Rigatoni with Goat Cheese & Prosciutto

Cook Time: ~12 min


This pasta dish is quick, easy, and cheesy. Need I say more?

Ingredients

4 tbsp butter

1 large white onion, thinly sliced

⅓ cup white wine

1 cup heavy cream

½ cup shredded gruyere cheese, shredded

½ cup goat cheese crumbles, shredded

1 box (16 oz) of rigatoni

Salt and pepper

Burrata cheese

Prosciutto, 4-5 slices


Instructions

  1. In a medium pot, bring salted water to a boil and cook the pasta according to the packaging. Save 1 cup of pasta water for later.

  2. In a large skillet over medium-high heat, melt the butter and add in your onion and cook until fragrant and translucent. Add in your wine, and continue to cook on medium until the onions are brown and caramelized.

  3. Add ½ cup of the heavy cream and add in the gruyere and goat cheese into it, stirring until the cheese melts and is fully incorporated. Add in the other half of the cream and bring to a boil. Season with salt and pepper. Turn the heat to low and let simmer until the pasta is ready to be added.

  4. In another pan, cook the prosciutto until crisp.

  5. When the pasta is ready, add into the skillet, mix well, and top with crispy prosciutto, burrata cheese and a bit more black pepper. If the pasta sauce is too thick, you can add in some saved pasta water. Enjoy!
