Rigatoni a la Vodka

Easy, quick and flavorful pasta for when you're in a rush.

Ingredients

~¼ cup olive oil

3 cloves of garlic, finely chopped

1 small shallot, diced

¼ cup tomato paste

½ cup milk, or any other preferred diary alternative

1 tbs vodka

2-3 tsp red pepper flakes

1 tbs butter

¼ cup freshly grate parmesan cheese

Basil, chopped, to serve

Salt and pepper to taste

Rigatoni, or any other pasta (2 servings)


Method

  1. Get a medium pot, fill with water and set to boil. Once the water boils, season with salt and throw in the pasta (set timer to cook according to the instructions on the packaging, or to preference). Save ¼ cup of the pasta water.

  2. In the meanwhile, in a large saucepan, heat the oil, and cook the garlic + onions. Add tomato paste, and chili flakes, and cook for 1-2 min. Add in the milk. Stir continuously. Toss in the vodka and cook for another additional 1-2 min.

  3. Season with salt and pepper to taste. Remove off the heat.

  4. By now, the pasta should be done. You should still have the pasta water (¼ cup). Strain the pasta, and add the pasta and butter to the pan. Add pasta water as needed to get the thick consistency that you like. Add cheese, and basil to finish.

  5. Plate, and enjoy!
