Rice Paper Noodles

This fun internet hack is a little more hit or miss, depending on your levels of patience and care. But when done right, it’s fun and easy!

Ingredients

10 pieces of rice paper


Instructions

  1. In a microwaveable wide and shallow bowl, stack at least 5 pieces of rice paper (the same size) together and soak them in ½ cup of warm water.

  2. Use your hands, one to hold the stack together in place and one to press air bubbles out starting at the center of the stack to the outer edge so that the rice paper will stick together more easily. Your noodle should start to become clear and more easily moveable.

  3. Microwave for about 1 minute 30 seconds, and then carefully move your noodle to a cutting board. At this stage your noodle should be clear and malleable.

  4. Using a lightly oiled sharp knife, individually cut strips of “noodles” into your desired thickness. You’ll want to cut in short steps (top down – vertically) vs cutting through your noodle layers because if the noodle layers are not super firm yet they will start to slip and slide away.

  5. Toss your noodles into a soup, or add them to a stir fry and enjoy!
