Quinoa Salad

Quinoa salad is quick to throw together, and easy to customize. This is a party favorite that is filling, and well-balanced with different vegetables, textures and flavors.


Ingredients

½ of uncooked quinoa, rinsed in a fine-mesh colander

1 cup water

¾ cup of cooked frozen corn, quickly boiled

⅔ can black beans, strained and rinsed

½ medium cucumber, chopped

1 large bell peppers, chopped

2 shallots, finely chopped (sub: ½ red onion)

½ cup finely chopped cilantro

½ bunch green onions, chopped


Dressing

¼ cup olive oil

2-3 limes, juiced

4-5 tbs apple cider vinegar

Salt & pepper, to taste

¼ tsp cumin


Instructions

  1. To cook the quinoa, follow the packaging instructions. Let cool. Boil the frozen corn, and let cool. Boil the black beans, drain and let cool.

  2. Chop up the remaining vegetables, and garnishes to incorporate later.

  3. In a large serving bowl add together the cooled ingredients, the vegetables, and the herbs.

  4. In a medium mason jar, add together the dressing items and shake well to mix. Pour the dressing into the bowl over all the ingredients, and mix well and until fully incorporated.

  5. Enjoy!
