Pork & Chive Dumplings

Dumplings (jiaozi) are always a good idea, a great snack, and super customizable. It is the ideal way to kick off the Lunar New Year and each culture has its own variation or name for theirs. It’s honestly so time consuming to make your own dumpling wrappers, so when I’m in a pinch, store bought is the way to go.

Ingredients
Store bought dumpling wrappers (Chinese, or Japanese Gyoza)
1 lbs ground pork
1 egg
1 small package chives, chopped finely
1 large garlic clove, finely minced
3 tbs sesame oil
6 tbs soy sauce
Salt, to taste
Pepper, to taste
Sauce (optional)
3 tbs soy sauce
1 ½ tbs sesame oil
1-2 tsp rice vinegar, or black vinegar, optional
Red chili flakes, optional
Ginger, thinly sliced, optional
Green onions, to garnish
Instructions
In a medium mixing bowl, add the egg, green onions, pork, soy sauce and sesame oil, and salt and pepper.
Take your wrapper and place a little less than a tablespoon of mixture in the center. Use a light egg wash around the inside edges to help them seal and fold your dumplings. There are many ways that you can fold your dumplings. You can fold it over and double seal it with a fork, or you can fold it so the top appears to fan out, it’s up to you.
Cooking
Frying
In a preheated large saute pan, add in oil, and place the dumplings in, making sure to leave enough distance between them. Add in a touch of water and place the lid on to allow them to fry and steam. Repeat as needed. Cook until golden brown and then place on a paper towel lined baking sheet.
Boiling
Bring a large pot of water to a rolling boil and carefully drop the dumplings into the water and stir continuously. Cook until they float (about 5 min).
Serve with whatever sauce you desire and enjoy!
