Pickled Red Onions

Serves: 8-10

Cook Time: 5 mins


I’ve been seeing a lot of pickling videos and thought why not do it myself. Use these red onions to add to salads, sandwiches, whatever you want, etc.

Ingredients

2 small red onions

1 cups white vinegar

1 cup apple cider vinegar

2 cups water

⅓ cup sugar

2 tbs sea salt


Optional

2 star anise

2 bay leaves

1 cinnamon stick

2 garlic cloves

1 tsp mixed peppercorns


Instructions

  1. Thinly slice the onions and divide them all between the two jars. Add your optional items into the jar.

  2. Heat the vinegars, water, sugar and salt in a saucepan over medium for 1-2 minutes, or until the sugar and salt are fully dissolved. Remove from the heat, let cool a little and pour over the onions. Tighten the lid and let cool at room temperature before storing in the refrigerator.

  3. They will be ready once they are bright pink and tender. They should keep for 2-3 weeks.
