Mom's Spaghetti Sauce

Cook Time: ~2 hours

Who doesn't love mom's spaghetti? This recipe is low fuss, and high in flavor. It is perfect for an outdoor summer lunch or dinner. We prefer it with a little kick!


Ingredients

1 large onion, diced

1 large carrot, diced

1 stalk celery, diced

4-6 mushrooms (optional)

1-2 bay leaves

3 cloves garlic, crushed

2 dried red peppers

1-2 tbs parsley, chopped

1 ¼ lb ground beef (lean)

1 large can of crushed tomatoes (fire roasted is best)

½ can water

1-2 tbs tomato paste (optional)

Instructions

  1. Chop the onion, carrots, celery, mushrooms, and garlic (separately).

  2. In a large 6 quart pot, saute the onions in olive oil until they are caramelized. Then add the carrots. Saute until the carrots are softer in texture. Then add the celery. Cook until all vegetables are soft and caramelized.

  3. Next add in the garlic and ground beef. Make sure to break up the bits of beef so that there are no clumps.

  4. Add parsley, 1 can of tomatoes, salt + pepper, bay leafs, and red peppers. Bring to a boil and simmer for 1 ½ - 2 hours. Add ½ tomato can of water at this step.

  5. Stir occasionally. Taste occasionally, and if needed add ~1 tbs tomato paste for more flavor.

  6. Serve with pasta of your choice, cooked by instruction on the packaging. Garnish with parmesan and enjoy!
