Mechado

Mechado is a hearty tomato based beef stew that originated in the Philippines. This stew is a great comfort dish, perfect for a cool and overcast Seattle day.

Ingredients

4 lbs beef, chuck roast

1 medium onion, thinly sliced

3 potatoes, peeled

2 carrots

5 cloves garlic, roughly chopped

3 bay leave

15 oz tomato sauce

2 cups beef broth

¼ cup soy sauce

1 ½ beef bouillon cubes

2 tbs brown sugar

2 tbs lemon juice


Instructions

  1. Thinly slice the onion and set aside, chop your garlic and set aside.

  2. Cube your chuck roast into small squares and season with salt. Sear in a pot over medium heat until all meat is seared. Turn the heat to low and add in the onions, cook for 5 minutes, add in your garlic and cook for another 2 minutes,

  3. Deglaze the pot with 2 cups of water. Add in your tomato sauce, soy sauce, bouillon cubes and sugar. Mix well.

  4. Add the beef back in and toss in bay leaves. Simmer for 1.5-2 hours.

  5. Peel 3 potatoes, cut into medium chunks and rinse and cut your carrots into bite sized pieces. Add them to the pot. Cook for another 10 minutes.

  6. Turn off the heat, add in your lemon juice and enjoy with a bowl of warm rice!
