Matzo Meal Pancakes

Matzo meal pancakes are what my Jewish mom would make me for breakfast or for a snack when I was a kid. It is a super easy and quick recipe, and a nice twist on what you might usually be used to pancake-wise. We usually eat it by adding sugar on top, but you can enjoy them like any traditional pancake.

Ingredients

2 large egg

2 tbsp matzo meal

2 tsp sugar

1 tsp baking powder

Instructions

1. In a small bowl, whisk together the ingredients.

2. Lightly grease a nonstick skillet over medium heat.

3. Cook each side for about 2 minutes, or until golden brown on each side.

4. Serve warm and enjoy!
