Lemon Bars

Lemon bars are only a few ingredients, quick to make and are a super tasty treat to make at home.

Ingredients
Dough
1cup all-purpose flour
½ cup butter, softened at room temp
¼ cup powdered sugar
Filling
2 large eggs
¾ cup sugar
2 tbs all-purpose flour
½ tsp baking powder
2 tsp lemon juice
1 tsp grated lemon zest
Instructions
In a bowl, combine the flour, butter and powdered sugar. Smush down (but not too hard) into an un-greased 8 inch square baking pan. It'll take some creativity to equally cover the bottom. Bake at 350° for ~20 minutes.
For filling, in a small bowl, beat eggs. Add the sugar, our, baking powder, lemon juice and zest. Mix until well incorporated and frothy. Then pour over the baked crust.
Bake until light golden brown (~20 min). Make sure it completely cools on a wire rack, or you will encounter issues with taking them out. Dust with confectioners' sugar and cut into bite sized pieces.
