Kimchi Fried Rice

Serves: 3-4

Step up your fried rice game by adding kimchi and fried eggs! Enjoy the savory and spicy treat anytime of the day.

Ingredients

2-3 cups jasmine rice, cooked and cooled

1 cup kimchi, chopped plus 2 tbs juice

3 tbs soy sauce

1 tbs gochujang

1 tbs sesame oil

2 tbs canola oil

2 cloves garlic, minced

1 small onion, diced

2 slices of spam, cubed

Nori strips, for garnish

1-2 fried eggs, for garnish

Handful of green onions, thinly sliced for garnished


Instructions

  1. In a small mixing bowl, whisk the kimchi juice, soy sauce, gochujang and sesame oil together.

  2. Heat a large skillet over medium-high heat and add in your chopped onion. Stir frequently for 2 min, then add in your garlic and keep cooking/stirring until onions have become translucent.

  3. Next, stir in the kimchi and cook for another 1-2 minutes. Then add in the rice, making sure to break it up evenly. Mix well, and then add in 3 tbs of your sauce mixture. Save some for later. Stir for another 1-2 minutes.

  4. Remove from the heat, serve with fried eggs, drizzle more of the sauce mixture over the eggs, cut thin nori strips and sprinkle with green onions. Enjoy!
