Potatoes and cauliflower sautéed with onion, tomatoes & traditional lndian spices. This dish has a way of making you feel cozy, and is a great addition at the dinner table. Spice level is optional, but is highly encouraged.
Ingredients
2 potatoes, peeled & cubed
1 cauliflower, cut into small pieces
1 medium onion, chopped
2 tomatoes, chopped
1.5 tsp ginger-garlic mix (½ inch grated ginger, 2-3 garlic cloves, finely chopped & smashed)
½ tsp cumin seeds
½ tsp turmeric powder
½ tsp dry mango powder (amchur)
¼ tsp red chili powder
¼ tsp garam masala powder
1 tsp coriander powder
2 tablespoons chopped cilantro
3-4 teaspoons oil, for frying
Salt, to taste
Instructions
Heat 2 tsp of oil in a large pan on medium heat. Add cauliflower pieces and fry for about 2-3 min on their own, and then add in the potato chunks. Cook for another 5-10 min, or until the vegetables have browned a little bit. Place on a tissue paper and set aside, to remove excess oil.
In the same pan, heat 1.5 tsp of oil on medium and add in the cumin seeds. Next add in the onions and cook for 2-3 min or until they become translucent. Then add the ginger-garlic mix and cook for an additional 2 min. Lastly, throw in the chopped tomatoes, cooking for 2 minutes before adding in all the spices.
Add in the turmeric, red chilli, coriander and amchur (mango powder). We were unable to find amchur in the store, and so we omitted this ingredient (and it was still super delicious!). Cover the pot and cook for 2-3 minutes.
Take the potatoes and cauliflower you set aside and add them back into the pan.
At this step, you’ll want to add in the chopped cilantro, garam masala powder, and the salt and mix well.
Cover the pan and cook for 5-8 more minutes, or until the cauliflower is tender. This may need additional cooking time, as the potatoes cook faster than the cauliflower. We added 1 tbs of water at time (and 2 total) to help. Taste for salt, and add more if needed. Remove from the heat, garnish with more cilantro and serve while hot.
