Homemade Pop-Tarts

Makes: 12-15 mini pop-tarts

Let’s be real, pop-tarts are just an excuse to eat dessert for breakfast! We made two classic flavors but these can be made with a variety of fillings to suit any palate. Try a different fruit jam or even Nutella!

Ingredients
Brown sugar-cinnamon filling
¼ cup brown sugar
¾ teaspoon ground cinnamon
2 teaspoons all-purpose flour
Raspberry jam filling
½ cup raspberry jam
½ tablespoon cornstarch
½ tablespoon water
Pastry crust
2 cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1 cup unsalted butter, cold and cubed
1 egg
2 tablespoon milk (can sub plant-based milk)
Egg wash
1 egg
1 tablespoon milk (can sub plant-based milk)
Cinnamon icing
½ cup powdered sugar
2 teaspoons milk
⅛ teaspoon vanilla
¼ teaspoon ground cinnamon
Directions
In a small bowl, whisk together the brown sugar, cinnamon, and flour. Set aside for assembly.
In a separate small bowl, whisk together the cornstarch and water. In a small saucepan, heat the jam and cornstarch mixture over medium heat until simmering. Remove from heat and let cool.
In a large bowl, whisk together the flour, sugar, and salt. Add in the butter, using your hands start cutting the butter into the flour until the butter is pea-sized. Mix in the egg and milk and knead until just combined. Divide into two disks, wrap in plastic wrap and chill for at least 30 minutes.
Roll the dough out to ~⅛” thick. Using a knife, cut into 2” x 2” squares. Repeat with the rest of the dough.
In a small bowl, whisk together the egg and milk to make the egg wash. Place half the cut pastry onto the baking sheet and add 1 teaspoon of filling (switching between the brown-sugar and raspberry). Brush the edges with the egg wash and place the other half of pastry on top. Gently press down on the edges and then use a fork to crimp the edges.
Preheat the oven to 350 degrees. While the oven is heating, place the baking sheet with the prepared poptarts into the fridge to chill.
Once preheated, place the baking sheet in the oven and bake for 15-20 mins or until lightly golden brown.
Whisk together the powdered sugar, milk, vanilla, and cinnamon. Set aside for later.
Once the pastry is done, take out the oven and let cool completely before icing.
Ice the poptarts and let set/harden before serving. Enjoy!
