Crispy Fried Enoki

Simple, hot and crispy enoki mushrooms go perfectly with a spicy mayo dipping sauce. What a snack!

Ingredients
1 large bunch enoki mushrooms
Cornstarch Mixture
Pinch of salt & pepper
½ tsp garlic powder
½ smoked paprika
¼ tsp Chinese five spice
5 tbs cornstarch, or more as needed
Wet Mixture (an extra -- optional, but highly suggested step)
2 eggs, beaten
Extras
Spicy mayo dipping sauce
Green onions, to garnish (optional)
Instructions
Create a station of your dry flour ingredients on a deep plate, your beaten eggs on a deep plate or in a shallow bowl, and your frying pan with canola oil over medium heat.
Pick off a mostly flat but large amount of the enoki making sure to prevent the pieces from detaching at the bottom. Dip lightly into cornstarch mixture, then quickly into the egg making sure you drip off excess, back into the cornstarch and then into the heated pan. Let cook for 1-2 minutes on each side or until crispy, and golden brown.
Remove from the pan and let dry on a small slotted rack, or on a paper towel lined baking sheet.
Let cool, and serve with spicy mayo dipping sauce, or any other sauce that you prefer. Enjoy!
NOTE: To make the spicy mayo, combine ½ cup mayonnaise, ½-1 tbs sriracha, ¼ tsp sesame oil and ½ tsp soy sauce.
