Corn Fritters

Throw together a simple batter with corn and bacon to get this delicious fritter.

Ingredients

14 oz bacon, diced

4 eggs

1 cup flour

2 bags of frozen corn kernels


Canola oil, for frying

Sea salt, to taste


Instructions

  1. Cook the bacon in a frying pan until crispy, set on a paper towel and let cool.

  2. Mix the flour, eggs, salt and half of the corn, blend in a food processor or blender. Blend it until it’s smooth and transfer it into a large bowl. Mix in the rest of the corn and all the bacon.

  3. Add oil into a hot pan (to shallow fry) and test the readiness with a little bit of batter on a chopstick. If it starts to ferociously bubble, you’re ready to go.

  4. Using a large spoon, scoop in a good amount of batter and flatten it out. Let fry for 3-4 minutes or until golden brown. Place on a paper towel and let cool. Repeat.

  5. Serve warm and with your choice of dipping sauce. Enjoy!
