Coffee Chocolate Chip Cookies

Cook Time: 12 min per batch


Forget dipping your cookies in your coffee, now you can have two in one! A twist on a favorite, in case you need a little pick me up.

Ingredients

1 cup brown sugar, packed in

1 cup butter, softened

12 oz chocolate chips (dark, or a mix of dark/semi-sweet/milk/white)

1 tbs oil canola

3 cups all purpose flour

1 ½ tbs espresso powder or instant coffee

½ cup granulated sugar

½ tsp salt

2 eggs

2 tsp vanilla extract

1 tsp baking soda

1 tbs warm water


Instructions

  1. Preheat your oven to 350 degrees.

  2. In a small bowl, whisk together the coffee and warm water until well incorporated. If necessary, add a touch more water if not completely dissolved.

  3. In a large mixing bowl (or in your standing mixer), cream together the butter, oil, and sugars until it is light and fluffy. Then add in your coffee mixture and mix until incorporated.

  4. In the same mixing bowl, add in your eggs, vanilla, salt and mix well. Then add in the baking soda and flour and mix again. Next, stir in chocolate chips and mix well.

  5. Take a parchment paper lined baking sheet and form your cookies making sure that they are not too close.

  6. Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven, and let cool on a wire rack for 5 minutes before eating.

  7. Repeat step #6 until all cookies are cooked, or freeze the dough for later.

  8. Store any extra cookies in an airtight container at room temperature. Enjoy!
