Coffee Cake

The perfect sweet treat to eat with a good cup of coffee!

Ingredients
Cinnamon Filling
½ cup packed light brown sugar
⅓ cup all purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon cocoa powder (optional but it adds color)
Crumb Topping
3 tablespoons unsalted butter, melted
½ cup packed light brown sugar
1 tablespoon cinnamon
½ cup all purpose flour
Cake
1 cup unsalted butter, room temperature
⅔ cup packed light brown sugar
1 cup granulated sugar
3 eggs, room temperature
1 tablespoon vanilla extract
¾ cup plain greek yogurt (optional: sub sour cream or dairy free yogurt)
1 teaspoon salt
3 teaspoons baking powder
1 ¼ cup milk, room temperature (optional: sub dairy free milk)
3 ⅔ cup all purpose flour
Directions
Preheat the oven to 350 degrees. Coat a 9x13 baking dish with butter or non-stick spray.
In a small bowl, mix together the ingredients for the cinnamon filling. Set aside.
In a medium sized bowl, using your hands, mix together the ingredients for the crumb topping. Mix until a crumb texture forms.
In a stand mixer, beat together the butter, granulated sugar and brown sugar until light a fluffy (~2 minutes).
Next, add in the eggs one at a time until combined. Then add in the vanilla, yogurt, salt and baking powder.
Keeping the mixer on low, alternate adding in the flour and the milk. Mix until just combined, don’t over mix!
Spread about half the batter into the prepared baking dish, spreading to the edges. Sprinkle the cinnamin filling evenly over the first cake batter layer. Carefully add in the rest of the cake batter and gently spread evenly on top of the filling. Lastly, sprinkle the crumb topping evenly on the top.
Place the baking dish in the preheated oven and bake for 45-50 minutes or until golden brown and set in the middle.
Remove cake and let cook at room temperature before enjoying.
