Classic Pound Cake

Serves: 12 slices

Simple, classic cake that everyone can enjoy. Serve with some ice cream, whipped cream, fresh fruit and/or a yummy chocolate sauce!

Ingredients

2 cups unsalted butter, softened to room temperature

3 ½ cups granulated sugar

6 large whole eggs

6 egg yolks

1 tablespoon vanilla extract

1 teaspoon salt

3 ½ cups all-purpose flour


  1. Preheat the oven to 350F and generously grease (with butter) and four a 10 inch tube pan or 12 cup bundt pan. Shake out excess flour and set aside.

  2. Place butter in a bowl of stand mixer, beat butter until creamy and smooth.

  3. Add in the sugar, beat until ingredients are light and fluffy.

  4. In a separate bowl, mix together eggs, additional egg yolks, vanilla, and salt.

  5. While the mixer is on low speed, slowly pour in egg mixture. Once all ingredients are incorporated, increase mixer speed to medium-high and beat for 1-2 minutes.

  6. Reduce speed to low and gradually add in flour just until the batter is smooth.

  7. Spread batter evenly into the prepared tube pan. Place in a preheated oven, bake for 1 hour 10 minutes to 1 hour fifteen minutes or until a wooden skewer inserted in the center comes out clean.

  8. Allow the cake to cool for 20 minutes before inverting the pound cake onto a cooking rack. Allow to cool completely before serving. Serve with ice cream, whipped cream and/or fresh fruit.
