Chinese Sausage Omelette

This Chinese sausage omelette is super easy to make. Enjoy it with warm rice!

Ingredients
2 large eggs, lightly beaten
1-2 links of Chinese sausage
3 small shallot, diced
1 tbs canola oil
Salt and pepper, to to taste
Garnish
Green onions, to garnish
Chili crisp, to garnish, optional
Sesame oil, optional drizzle
Instructions
Thinly slice the sausage at an angle.
In a small bowl, beat the eggs and season them.
Preheat a non-stick pan over medium-high heat, saute the shallots and half of your green onions, add the sausage, and cook.
Spread the sausage slices evenly in the pan, lower the heat to medium and add in enough of the egg mixture to meet the sausage slices half height. Make sure it evenly covers the pan and solidifies those sausage slices in place. Put the lid on (optional) and cook for another minute or so. Flip over the omelette, turn off the heat, let cool.
Add your optional garnish, and enjoy!
