Butternut Squash Salad

This easy to make butternut squash winter salad is a perfect comfort dish that offers a light touch of spice, handfuls of fresh greens, and a nice bite of crunchy toppings to compliment.

Ingredients
~3 cups butternut squash, peeled, seeded, cubed
1 tsp extra-virgin olive oil
¼ tsp cumin
¼ tsp cayenne
3 cups of mixed greens
~1 oz goat cheese
4 tbs pomegranate seeds (optional)
2 tbs pistachios (optional)
Salt and pepper, to taste
Dressing
2 ½ tbs extra-virgin olive oil
1 tbs apple cider vinegar
½ tsp fresh lemon juice
Salt and pepper, to taste
1 ½ tbs water
Instructions
Preheat oven to 425°F and line a baking sheet with parchment paper.
Toss squash cubes in olive oil, cumin, cayenne, salt and pepper. Place on the sheet and bake for 30 min.
In a mason jar, make the dressing and shake well.
Remove the butternut squash from the oven, let cool slightly before combining.
Assemble the salad: start with greens and toss in the dressing in a large mixing bowl. Then add some leaves into a plating bowl, and then add in some of the feta cheese, pomegranate seeds and crushed pistachios. Continue until all ingredients are used up. Finish with a layer of the additions for color and presentation.
