Breakfast Bars

An easy recipe that uses up ingredients that most of us have already in our pantries. This recipe is very customizable, swap out/in nuts, seeds, and dried fruit to your liking. Eat these for a quick breakfast or for a healthy snack. Enjoy!



Ingredients

1 ½ cups rolled oats

1 ½ cups nuts (almonds, pecans, walnuts, pistachios, pine nuts..etc whatever nuts you have)

¼ cup maple syrup or honey

¼ cup peanut butter (creamy or crunchy)

1 ripe banana, mashed

½ cup seeds (sunflower, flax, chia..etc)

¼ cup cocoa nibs and/or chocolate chips

Additional spice/seasoning options: vanilla, cinnamon, pumpkin pie spice, dried fruit


Instructions

  1. Optional Step: Preheat oven to 350 degrees. Add oats and nuts to a baking sheet, spreading evenly. Bake for about 10-15 mins or until slightly golden brown. This step gives the oats and nuts a toasted flavor.

  2. In a small saucepan, heat up maple syrup, peanut butter, and banana over medium low heat until smooth.

  3. In a large bowl, combine toasted oats, nuts, seeds, cocoa nibs and other flavorings. Mix in the heated maple syrup/peanut butter mixture. Stir until fully combined.

  4. Line a 8x8 inch baking dish with parchment paper so that the bars can lift out easily.

  5. Transfer mixture to lined baking dish, press down firmly with either the back of a spoon or measuring cup. This helps them hold together. Cover the dish with plastic wrap or parchment paper, let cool/set in the fridge for 1 hour.

  6. Remove bars from pan and cut into 8-10 even rectangular bars. Store in airtight container for up to a few days or in the freezer for longer.
