Blueberry Crumble Muffins

Total Time: 40 mins
Simple blueberry muffins but with a crumble on top because that way is the superior way.

Ingredients
Muffins:
1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
2-3 tbs vegetable oil
1 egg
1 cup equal parts plain Greek yogurt and water
1 cup fresh blueberries
Crumb Topping:
½ cup sugar
⅓ cup flour
¼ cup butter, cubed
1 ½ tsp ground cinnamon
Instructions
Preheat the oven to 400 degrees F and line your muffin tin with cupcake liners.
In a standing mixer, add in the flour, sugar, baking powder, and salt. Mix well.
Pour the oil into a large liquid measuring cup. Add in your egg and enough of the yogurt mixture to reach the 1-cup mark. Stir until combined.
Pour the wet mixture into the dry mixture and mix well. Gently fold in blueberries. Set batter aside.
In another bowl add in the sugar, flour, butter, and cinnamon. Using a fork, or your hands massage the mixture until it is well incorporated.
Using a spatula, spoon the batter into the muffin liners, filling ¾ of the way. Then sprinkle the crumble mixture on top.
Bake in the oven for 20-25 minutes. Check with a toothpick to see how well cooked the muffins are. If they need more time, add 2-3 min each time you need to.
Remove from the oven once the toothpick comes out dry, place on a cooking rack and let cook. Once the muffin cools, it is ready to eat. Enjoy!
