Beef Tacos

Serves: 7-8

Prep Time: 15 min

Cook Time: 4 hours


Simple and delicious, this recipe is bound to be a party favorite during an upcoming dinner party.

Ingredients

Chuck Roast

4 lbs beef chuck roast, boneless

Salt and pepper, to season


Guacamole

3 large avocados

Juice of 2 limes

Juice of ½ an orange

¼ cup red onion, chopped

¼ cup jalapeno, chopped

¼ cup cilantro, chopped

½ tsp salt and pepper


Tortillas

Salsa of your choice

Cheese, for garnish, optional


Instructions

  1. Preheat the oven to 325 degrees.

  2. Generously season your chuck roast with salt and pepper on both sides.

  3. Add your roast to a large baking dish, cover, and bake for 1 hour per pound of meat.

  4. Remove the roast and carefully shred it. Toss the shredded meat in the rendered fat juices, then place back in a 425 degree oven for another 25 minutes.

  5. In a medium bowl, assemble your guacamole. Adjust seasoning as needed.

  6. Assemble your tacos in tortillas of your choice, and enjoy!


Note: Depending on your cut of meat, it will change how the meat cooks. I wasn’t able to get chuck roast at the store, so I used top round roast, thus my beef didn’t fall apart to shred like a roast would, but delicious all the same.
