Asian Style Glazed Carrots

Asian Style Glazed Carrots make for a perfect snack or entree in your repertoire. Everything is adjustable to your needed servings and to taste.

Ingredients

1 - 1 ½ lbs carrots, thinly sliced

¼ cup honey

¼ cup shallot / garlic infused oil

1 tbs soy sauce or to taste

1 tsp of sesame oil, or to taste

1 large clove garlic, finely minced

Pinch of salt and pepper, to taste

Small handful of green onions, green + white parts separated

Sesame seeds, for garnish (optional)

1-inch piece of ginger, skinned + finely grated (optional)


Instructions

  1. Preheat the oven to 425 degrees.

  2. In a large mixing bowl, combine the carrots, honey, oil, soy sauce, sesame oil, garlic and salt and pepper. Toss well.

  3. In a large greased pan, add in the carrots and half of the sauce mixture.

  4. Cook for 10 min and then turn the carrots, and cook for another 10 min.

  5. Remove from the oven, drizzle with a little additional sauce and garnish with green onion and/or sesame seeds. Enjoy!


Notes:

  • The sauce may start to go to the side of the pan and burn, which is fine since that is why we saved more sauce.

  • If you want a little spice kick, add some chili pepper flakes to the second half of the sauce mixture.
