Asian Chopped Salad

Your classic Asian inspired chopped salad. Flavor packed, fresh and crunchy. It'll have you eating out the bowl it's so good.

Ingredients

Dressing

2 tbs soy sauce

3 tbs rice vinegar

1 tbs sesame oil

1 tbs honey

1 clove of garlic, finely minced

2-3 tbs canned mandarin orange juice


Salad

½-1 cup edamame, cooked and cooled

½ head of romaine lettuce, chopped

¾cups red cabbage, finely chopped

1-2 large carrots, peeled and thinly sliced

Handful of green onions, thinly sliced

¼ cup sliced almonds

10 oz can mandarin oranges, reserve liquid

Optional, fried wonton skins, or fried chow mein crackers for a crunch factor


Ingredients

  1. In a small bowl or mason jar, combine dressing ingredients and mix well. Let sit while you prep the salad.

  2. In a large bowl, add the lettuce, cabbage, carrots, cooked and cooked edamame, sliced almonds, oranges and your handful of green onions. Mix well.

  3. Mix the dressing well before pouring over. Add more of anything on top for plating purposes and enjoy!
