Tom Yum Noodle Soup

The balance between salty, sour, and spicy is a great thing and this Thai Tom Yum Noodle Soup really hits the spot! You can use egg noodles, or rice noodles in this dish.

Ingredients
Pork Soup
3 quarts water
1.5 lb pork bones, rinsed well
1/2 bunch cilantro stems
1/2 lb daikon, peeled & chopped
1 inch galangal, chopped into small pieces
1 head garlic, peeled & crushed
1/2 tablespoon peppercorns
1/2 tablespoon salt
2 ½ tablespoon sugar
4 tablespoons of fish sauce
6-7 tablespoons lime juice
1 tablespoons of chili flakes
Bowl Preparation
1 package fresh flat rice noodles, or egg noodles
Pork meatballs (homemade or store bought) Preserved Chinese cabbage, or preserved daikon
1 package bean sprouts (optional)
¾ - 1 lb of ground pork
Garnishes
1/2 bunch cilantro
1-2 limes for garnish
1 bunch of green onions, chopped
Peanuts, toasted and chopped
Process
Pork Soup
Fill a 4-quart pot with water (¾ full).
Rinse the pork bones in cold water, making sure to get rid of dried blood, and impurities. Add the bones into the pot.
Peel and chop the daikon & galangal into large pieces. Add to pot.
Add all the ingredients into the pot except the last 5 broth ingredients (salt, fish sauce, sugar, lime juice and chili flakes). Simmer for an hour to an hour and a half without the lid. Add more water as needed to maintain water height.
Add the remaining soup ingredients towards the end of the hour and taste as you go. If you like it spicy, add more chili flakes. If you like it more sour, add more lime juice. If you like it salty, add more fish sauce. As the soup simmers, prepare other ingredients.
Mince cilantro stem & garlic together, and add them to the ground pork along with ground pepper & salt. Massage the spices into the ground pork. Using your hands, add tiny bits of the pork into the pot until all of it has been used up.
Add the meatballs into the simmering soup.
Bowl Assembly
Toast peanuts in a sheet (7-10 minutes) in the oven at 400 degrees. Let them cool, and chop them into garnish size for later use.
Prepare your fresh noodles by soaking them in room temperature water until you are ready to cook them. Once cooked to al dente, add them into a bowl to start your preparation. If you are using a different noodle, follow the package instructions to cook them.
Rinse and place your bean sprouts into the prep bowl with the noodles.
Top your bowl with chopped cilantro, green onions, peanuts, salted cabbage, fried garlic, chili powder & white pepper and have sliced limes to set aside for later use.
Add the hot broth making sure to scoop up some meatballs and ground pork to the bowls.
