Tanghulu

Serves: 2-4

Prep Time: ~25 min


Tanghulu is a Chinese sugar coated snack that you will love. You can tanghulu any fruits that you want as long as they pat dry well, but is best with strawberries.

Ingredients

2 cups sugar

1 cup water


Wooden skewers

Fruit of your choice, would recommend 1 box of strawberries as they have the highest sweetness level.


Instructions:

  1. In a saucepan, over medium heat, combine the water and sugar. Stir initially, and then don't moving forward.

  2. If you have a candy thermometer, allow the sugar mixture to heat to 300-350. The sugar mixture will turn into a deep golden color after ~20 min of cooking.

  3. In the meantime, you can rinse, thoroughly pat dry, and skewer your fruit.

  4. Test the mixture with a skewer. To know it is ready, the sugar mixture will instantly harden within seconds of dipping. You can additionally dip it into ice water to expedite it.

  5. Turn off the heat and quickly dip your fruits into the sugar mixture. Dip into an ice bath after they’re dipped in the sugar mixture to quicken the hardening process. Place dipped fruit on parchment paper to rest.

  6. You can tap the fruit to test if the sugar has hardened, but it should be immediately ready to eat. Enjoy!


For clean up: if you have extra sugar after dipping, it is best to discard it quickly before it hardens. I poured mine into an old plastic yogurt container that I was going to toss. You can also pour it out onto parchment paper if you don’t have too much. To clean my pan, I added hot water and put it on the stove on high. The sugar should dissolve into the water and you should be able to clean your pot from there.
