Sautéed Bok Choy with Toasted Garlic

This is an easy, simple, and delicious vegetarian restaurant-style bok choy dish that you can't miss. You can substitute the oyster sauce if you are vegan!

Ingredients
6 baby bok choy, individual leaves separated
Toasted Garlic
3 tbs oil
5 cloves garlic, minced
Sauce
1 ½ tbs oyster sauce
1 tsp sugar
1 ½ tbs garlic and shallot infused oil
1 ½ tbs water
Instructions
In a large saute pan over medium-high heat, add in your oil. Once the oil is hot, add in your minced garlic. Cook for 1-2 minutes, or until crispy and golden brown. Remove from the heat and set aside for later.
In a small bowl, combine the sauce ingredients.
In that same pan from earlier, add in your bok choy, and add in a tbs of water to help create steam to cook your bok choy. Cover with a lid if you can, and cook for 1-2 minutes, or until slightly softer. Repeat as needed.
Add in your sauce and mix well. Place the lid back on and cook for another 1-2 minutes, or until the bok choy is much softer. You can test this by taking a wooden spoon and lightly putting pressure on the bottom of the stem of the bok choy which will be become more pliable the longer it cooks. I like to cook it til it’s mostly soft but isn’t mushy. The stem of the leave should maintain some shape still.
Remove from heat, plate and garnish with your toasted garlic. Enjoy!
