Grilled Saffron Salmon

This simple and quick saffron salmon is grilled to juicy, tender and crispy edge perfection. Each bite melts in your mouth.

Ingredients
1 ½ tsp saffron threads
Pinch of granulated sugar
3 tbs lemon juice, plus more for serving
2 tbs extra virgin olive oil
2 garlic cloves, finely grated, or finely minced
1 ½ tsp kosher salt
½ tsp dried oregano
½ tsp ground coriander
½ tsp black pepper
¼ tsp ground turmeric
1 ½ lb salmon filet, bones removed and skin-on
Fresh mint, for serving
Instructions
Use a mortar and pestle to grind the saffron with a pinch of sugar to a fine powder (about ¼ tsp). Add 2 tbs of boiled water and let sit for a few minutes to allow the mixture to steep.
Transfer to a tupperware, or a dish deep enough for the whole filet to fit. Add in the lemon juice, olive oil, coriander, pepper, garlic, salt, oregano, and turmeric. Mix well.
Place the salmon skin up into the tupperware/dish with the marinade, coat/spoon marinade over the skin, cover and place in the refrigerator for at least 30 minutes.
Prepare your grill/oven to 425-450 degrees F, and grill/bake the salmon until tender (about 12-15 min), making sure to brush more marinade onto the salmon every couple minutes.
Remove from the grill/oven, and serve with lemon wedges, and fresh mint. Enjoy!
