Croquetas de Jamón (Ham Croquettes)

Serves: 3-4

Prep Time: 4 hours + 30 min

Cook time: 15-20 min


When you can't go to Spain, attempt to make the tapas at home. This recipe is easy, deliciously crunchy and filled with savory goodness.

Ingredients

4 tbs unsalted butter

¼ cup olive oil

Less than 1 cup of flour

1 medium onion, finely diced

1 quart whole milk, room temp

1 pinch of nutmeg

250 grams of Serrano ham, diced into small pieces


For Frying

Flour for breading, plated

2 eggs, beaten and plated

Breadcrumbs, plated

Canola or vegetable oil

Process

  1. In a medium sized pan over medium-high heat, melt the butter and oil.

  2. Toss in the onions and sauté until it starts to brown. Throw in a pinch of salt and the nutmeg. Next throw in the ham and cook for ~30 seconds.

  3. Add in the flour and stir continuously and until the flour turns a light brown color.

  4. Once the flour changes color, add in the milk slowly, little by little, making sure you are always stirring. This process could take ~15 minutes. Turn off the heat and let the dough cool.

  5. Butter the sides of a large bowl and wrap the dough. Refrigerate for at least 4 hours.

  6. Remove from the fridge and using your hands, shape the croquettes into a shorter hotdog shape. Cover them in flour, then eggs, and then roll into breadcrumbs.

  7. Fry in oil over medium-high heat until golden brown and let cool before serving! Enjoy.
